Mango Panna Cotta
Feel like time is against you? Want to wow in a hurry? Don't worry, this isn't an advert for anxiety - it's a lovely wee panna cotta recipe, that can be rustled up super quickly, tastes delish, and made in advance!
1 mango - 100ml milk - 500ml double cream - 80g sugar - 4 gelatine leaves
Cut the mango in to cubes and add to a pan with the sugar and a splash of water, put the lid on and cook at a low heat until the mango starts to turn in to pulp, and the sugar has dissolved. Once this has happened, puree the mixture and leave to cool slightly.
Pop the gelatines leaves in to cold water and soak until wobbly, then add to the mango, stirring until the gelatine has melted in to the puree.
In a bowl, mix together the milk and cream, and then add the mango mix - stirring thoroughly.
Finally put the mix in to moulds and chill in the fridge until set, this will take at least 3 hours.
We served our panna's with hot stewed blackberries and pistachios, however any tart fruit would work well, with the addition of nuts for crunch.
