Crayfish & Asparagus Bites
Inspired by our recent article for Time Out Edinburgh, we have decided to come up with our own Alright Treacle bites, using seasonal British asparagus, crayfish tales and wild garlic flowers.
100g asparagus1 bread roll - 200g soft cheese - 125g crayfish tails - 1 egg - 1 green chilli - handful of wild garlic flowers - 1 lemon - avocado
Firstly, cut the asparagus in to small, bit-sized pieces and blanch in hot water for a couple of minutes until slightly tender.
Toast the roll, then blitz until it turns in to breadcrumbs and mix with the soft cheese and egg.
Finely slice the chilli then add to the mix with the lemon zest, asparagus, wild garlic (if you can't find these then 50g of spring onions works just as well) and chopped crayfish tails. Season to taste with salt and pepper, then roll in to balls and deep fry until golden brown.
We served ours with a simple avocado puree, using half of a ripe avocado and the juice of half a lemon.
